I just want to make an assessment about what you mentioned in the Gastronomy section of the “pinto beans”, first of all it is very rare that you find a place in Cantabria where they are called that, the typical stew of the central-eastern area is red beans or caricos montañeses, which is what the native red bean is called and has nothing to do with the well-known Basque beans from Tolosa. I say this because when reading it it seems that they only eat beans in Euskadi and that at Casa Tomás they have copied that dish. Not to be pedantic, but the regions bordering Euskadi have to fight to make it known that many dishes are not exclusive to this great Gastronomic Giant and that we also have our own cuisine yet to be discovered.
They have written “judia pinta”, which sounds even more strange in Cantabria. We never use the word Jewish to refer to beans. It is more to refer to the bean or green bean, depending on the area it is called pod, tronchera, bean...
Of course, eating red beans (or caricos) is something as normal and as traditional in Cantabria, as eating mountain stew, rabas (not fried squid) or quesadas.
