La black truffle It is a great protagonist in the region of High Mastery, in the interior of Castellón, and the best expression of what has been said is the fair that is held every year around this mushroom that has become a pearl of the gastronomyto. My recent trip through this region coincided with the celebration of said fair, known as the Ports-Maestrat Black Truffle Show 2014, whose main activities took place on the weekend of February 8 and 9. But, what you can see and do at a black truffle fair?

This year's edition took place in the town of benassal, in whose fair pavilion all the activities have been carried out. On Saturday, technical sessions are held on truffle farming, with presentations and round tables on topics related to the cultivation and collection of truffles.

And on Sunday, the day of my visit, the day began with the Black Truffle Gastronomy Contest, with the participation of student chefs from the Costa Azahar Hospitality School, from Castellón. But, without a doubt, for visitors, the most striking thing is the Truffle Search Dog Competition, during which in a marked area next to the aforementioned pavilion, several truffle dogs, together with their owners, were looking for previously hidden truffles. This contest was complemented with an exhibition of truffle hunt with wild boar.

Finally, the day ended with a popular meal in which attendees could taste dishes prepared by the aforementioned students. Of course, at the fair you could also see various exhibitors, from farmers producing black truffles, to nurseries that sell truffle trees, or shops selling delicatessen products from the region. As a complement to the fair, during the months of January to March in various towns in the region, the Castellón Truffle Gastronomic Days, during which restaurants in the area offer special menus in which the truffle is the main protagonist of the cuisine.
